Ingredients
- 2 cucumbers, diced
- 1 cup mozzarella balls
- 1/4 red onion, thinly sliced
- 1 cup cherry tomatoes, halved
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions
- In a large bowl, combine the diced cucumbers, mozzarella balls, red onion, and cherry tomatoes.
- In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Garnish with fresh basil leaves before serving.
Notes
For a vegan version, substitute mozzarella with firm tofu or vegan mozzarella. Keep the dressing separate if storing to maintain crunch.
