A delightful dinner combining sweet, tangy flavors with the heartiness of pasta, featuring honey BBQ chicken over penne.
Ingredients
- 12 oz penne pasta
- 2 tablespoons olive oil
- 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
- Salt and pepper to taste
- 1 cup honey BBQ sauce
- 1/4 cup honey
- 1 tablespoon soy sauce
- 2 cloves garlic, minced
- 1 tablespoon apple cider vinegar
- 1 teaspoon smoked paprika
- 1/2 teaspoon onion powder
- 1/4 teaspoon cayenne pepper (optional for heat)
- 1 cup shredded mozzarella cheese
- 1/4 cup chopped fresh parsley for garnish
Instructions
- Cook the penne pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium-high heat. Season the chicken with salt and pepper, add it to the skillet, and cook until golden brown and cooked through, about 6-8 minutes. Remove from the skillet and set aside.
- In the same skillet, reduce the heat and add minced garlic. Sauté for one minute until fragrant.
- Add the honey BBQ sauce, honey, soy sauce, apple cider vinegar, smoked paprika, onion powder, and cayenne pepper to the skillet. Stir and simmer for 2-3 minutes.
- Return the cooked chicken to the skillet and coat it well with the sauce. Cook for another 2 minutes.
- Add the cooked penne to the skillet and toss everything together until well combined.
- Sprinkle the mozzarella over the mixture, cover, and cook on low heat until the cheese melts, about 3-5 minutes.
- Garnish with parsley and serve hot.
Notes
Feel free to adjust the BBQ sauce and honey to your taste. Add fresh herbs for enhanced flavor.
