Description

A delightful dinner combining sweet, tangy flavors with the heartiness of pasta, featuring honey BBQ chicken over penne.


Ingredients

  • 12 oz penne pasta
  • 2 tablespoons olive oil
  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • Salt and pepper to taste
  • 1 cup honey BBQ sauce
  • 1/4 cup honey
  • 1 tablespoon soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper (optional for heat)
  • 1 cup shredded mozzarella cheese
  • 1/4 cup chopped fresh parsley for garnish


Instructions

  1. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Season the chicken with salt and pepper, add it to the skillet, and cook until golden brown and cooked through, about 6-8 minutes. Remove from the skillet and set aside.
  3. In the same skillet, reduce the heat and add minced garlic. Sauté for one minute until fragrant.
  4. Add the honey BBQ sauce, honey, soy sauce, apple cider vinegar, smoked paprika, onion powder, and cayenne pepper to the skillet. Stir and simmer for 2-3 minutes.
  5. Return the cooked chicken to the skillet and coat it well with the sauce. Cook for another 2 minutes.
  6. Add the cooked penne to the skillet and toss everything together until well combined.
  7. Sprinkle the mozzarella over the mixture, cover, and cook on low heat until the cheese melts, about 3-5 minutes.
  8. Garnish with parsley and serve hot.

Notes

Feel free to adjust the BBQ sauce and honey to your taste. Add fresh herbs for enhanced flavor.
