Description

Taco beef nachos are a delightful and flavorful dish that brings the bold, zesty tastes of taco night to your snack table. Perfect for parties and game days.

Ingredients

  • ½ tbsp olive oil
  • 1 onion, finely chopped
  • 250g lean beef steak mince (5 percent fat)
  • 30g taco seasoning
  • 400g tin black beans
  • 4 tbsp mild salsa dip
  • 270g lightly salted tortilla chips
  • 150g cherry tomatoes, quartered
  • 50g sliced jalapeños in brine, drained
  • 100g grated mozzarella and Cheddar mix
  • 1 red chili, finely sliced
  • 2 spring onions, finely sliced
  • 200g sour cream and chive dip

Instructions

  1. Preheat your grill to medium-high heat.
  2. In a large frying pan, heat the olive oil over medium heat. Add the finely chopped onion and fry for about 5 minutes until softened and lightly golden.
  3. Add the lean beef mince to the frying pan, breaking it up with a wooden spoon. Fry for another 5 minutes until the beef is golden brown.
  4. Stir in the taco seasoning and cook for an additional 2 minutes, ensuring the spices are toasted and aromatic.
  5. Pour in the black beans along with their water, and cook for 5 minutes until the mixture thickens.
  6. Remove from heat and stir in the mild salsa dip, mixing thoroughly.
  7. Arrange the tortilla chips on a large baking tray, spacing out some of the chips on the edges for toppings.
  8. Spoon the beef taco mixture generously onto the tortilla chips, ensuring some chips are left naked for a crunchy bite.
  9. Sprinkle cherry tomatoes, sliced jalapeños, and the cheese mix over the nachos.
  10. Place the tray under the grill for roughly 5 minutes, or until the nachos are crispy and the cheese is melted to bubbly perfection.
  11. Finally, sprinkle the sliced red chili and spring onions over the top. Serve hot with a generous side of sour cream and chive dip.

Notes

Use fresh ingredients for the best taste. Layer toppings wisely to prevent sogginess. Consider making your own salsa for a fresher option.
