- ½ tbsp olive oil
- 1 onion, finely chopped
- 250g lean beef steak mince (5 percent fat)
- 30g taco seasoning
- 400g tin black beans
- 4 tbsp mild salsa dip
- 270g lightly salted tortilla chips
- 150g cherry tomatoes, quartered
- 50g sliced jalapeños in brine, drained
- 100g grated mozzarella and Cheddar mix
- 1 red chili, finely sliced
- 2 spring onions, finely sliced
- 200g sour cream and chive dip
Instructions
- Preheat your grill to medium-high heat.
- In a large frying pan, heat the olive oil over medium heat. Add the finely chopped onion and fry for about 5 minutes until softened and lightly golden.
- Add the lean beef mince to the frying pan, breaking it up with a wooden spoon. Fry for another 5 minutes until the beef is golden brown.
- Stir in the taco seasoning and cook for an additional 2 minutes, ensuring the spices are toasted and aromatic.
- Pour in the black beans along with their water, and cook for 5 minutes until the mixture thickens.
- Remove from heat and stir in the mild salsa dip, mixing thoroughly.
- Arrange the tortilla chips on a large baking tray, spacing out some of the chips on the edges for toppings.
- Spoon the beef taco mixture generously onto the tortilla chips, ensuring some chips are left naked for a crunchy bite.
- Sprinkle cherry tomatoes, sliced jalapeños, and the cheese mix over the nachos.
- Place the tray under the grill for roughly 5 minutes, or until the nachos are crispy and the cheese is melted to bubbly perfection.
- Finally, sprinkle the sliced red chili and spring onions over the top. Serve hot with a generous side of sour cream and chive dip.
