Description

Ingredients

  • 2 pounds sweet potatoes (about 4 medium, 4 cups mashed)
  • ½ cup whole milk
  • 2 large eggs
  • ½ cup granulated sugar
  • ¼ cup salted butter, melted
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 cup brown sugar
  • ½ cup all-purpose flour
  • 1 cup chopped pecans
  • ½ cup salted butter, softened


Instructions

  1. Scrub the sweet potatoes and prick them with a fork. Bake in a preheated oven at 425°F for 40-50 minutes until tender.
  2. Let the sweet potatoes cool slightly, then peel and reduce the oven temperature to 350°F.
  3. In a mixing bowl, combine the mashed sweet potatoes, whole milk, eggs, granulated sugar, melted butter, salt, vanilla extract, and ground cinnamon. Mix until smooth and creamy.
  4. Spread the sweet potato mixture evenly in a greased 9×13 baking dish.
  5. In another bowl, mix together the brown sugar, all-purpose flour, and chopped pecans. Add the softened butter and mix until crumbly.
  6. Sprinkle the streusel topping over the sweet potato filling.
  7. Bake for 40-45 minutes or until the casserole is set and the top is golden brown.
  8. Cool for about 10 minutes before serving.

Notes

For best results, choose medium-sized orange-fleshed sweet potatoes and avoid over-mixing the filling.
