Ingredients
- 2 pounds sweet potatoes (about 4 medium, 4 cups mashed)
- ½ cup whole milk
- 2 large eggs
- ½ cup granulated sugar
- ¼ cup salted butter, melted
- ½ teaspoon salt
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1 cup brown sugar
- ½ cup all-purpose flour
- 1 cup chopped pecans
- ½ cup salted butter, softened
Instructions
- Scrub the sweet potatoes and prick them with a fork. Bake in a preheated oven at 425°F for 40-50 minutes until tender.
- Let the sweet potatoes cool slightly, then peel and reduce the oven temperature to 350°F.
- In a mixing bowl, combine the mashed sweet potatoes, whole milk, eggs, granulated sugar, melted butter, salt, vanilla extract, and ground cinnamon. Mix until smooth and creamy.
- Spread the sweet potato mixture evenly in a greased 9×13 baking dish.
- In another bowl, mix together the brown sugar, all-purpose flour, and chopped pecans. Add the softened butter and mix until crumbly.
- Sprinkle the streusel topping over the sweet potato filling.
- Bake for 40-45 minutes or until the casserole is set and the top is golden brown.
- Cool for about 10 minutes before serving.
Notes
For best results, choose medium-sized orange-fleshed sweet potatoes and avoid over-mixing the filling.
