Description

A warm and comforting soup featuring sweet potatoes and carrots, packed with vitamins and nutrients.


Ingredients

  • 2 large sweet potatoes, peeled and diced
  • 4 medium carrots, peeled and sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground ginger
  • Salt and pepper to taste
  • 1/4 cup coconut milk (optional)
  • Fresh cilantro for garnish


Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, sauté until the onion becomes translucent.
  3. Stir in the diced sweet potatoes and sliced carrots.
  4. Pour in the vegetable broth, and add ground cumin, ground ginger, salt, and pepper.
  5. Bring the mixture to a boil, then reduce the heat and simmer until the sweet potatoes and carrots are tender, about 20 minutes.
  6. Remove from heat and blend the soup until smooth, adding coconut milk if desired.
  7. Serve garnished with fresh cilantro.

Notes

Feel free to adjust the spices according to your taste. You can add more cumin for a stronger flavor or a pinch of cayenne pepper for some heat.
