Description
A warm and comforting soup featuring sweet potatoes and carrots, packed with vitamins and nutrients.
Ingredients
- 2 large sweet potatoes, peeled and diced
- 4 medium carrots, peeled and sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1/2 teaspoon ground ginger
- Salt and pepper to taste
- 1/4 cup coconut milk (optional)
- Fresh cilantro for garnish
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic, sauté until the onion becomes translucent.
- Stir in the diced sweet potatoes and sliced carrots.
- Pour in the vegetable broth, and add ground cumin, ground ginger, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat and simmer until the sweet potatoes and carrots are tender, about 20 minutes.
- Remove from heat and blend the soup until smooth, adding coconut milk if desired.
- Serve garnished with fresh cilantro.
Notes
Feel free to adjust the spices according to your taste. You can add more cumin for a stronger flavor or a pinch of cayenne pepper for some heat.
