Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup pineapple juice
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
- 1 can (8 oz) crushed pineapple, drained
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Place the chicken breasts in the slow cooker.
- In a bowl, mix together the pineapple juice, soy sauce, brown sugar, garlic, and ginger.
- Pour the mixture over the chicken.
- Add the crushed pineapple on top.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Once cooked, shred the chicken with two forks.
- Stir to combine with the sauce and serve over rice.
- Garnish with chopped green onions.
Notes
For a thicker sauce, mix one tablespoon of cornstarch with cold water and stir into the sauce. Adjust sweetness as desired.
