Description

A delightful dish that combines tender chicken, refreshing pineapple, and savory soy sauce, perfect for any occasion.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple juice
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 1 can (8 oz) crushed pineapple, drained
  • Salt and pepper to taste
  • Chopped green onions for garnish


Instructions

  1. Place the chicken breasts in the slow cooker.
  2. In a bowl, mix together the pineapple juice, soy sauce, brown sugar, garlic, and ginger.
  3. Pour the mixture over the chicken.
  4. Add the crushed pineapple on top.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  6. Once cooked, shred the chicken with two forks.
  7. Stir to combine with the sauce and serve over rice.
  8. Garnish with chopped green onions.

Notes

For a thicker sauce, mix one tablespoon of cornstarch with cold water and stir into the sauce. Adjust sweetness as desired.
