Description
A vibrant and nutritious salad made with lentils, fresh arugula, and sun-dried tomatoes.
Ingredients
- 1/2 cup dry lentils
- 2-3 cups arugula
- 1/2 cup sun-dried tomatoes
- 1 cup grape tomatoes (halved)
- 2 Tbsp crushed walnuts
- 2 Tbsp goat cheese crumbles (or vegan cheese crumbles)
- 2-4 Tbsp Vegan Turmeric Ginger Dressing
Instructions
- Cook the lentils according to the package directions until tender.
- In a large bowl, top the arugula with sun-dried tomatoes, halved grape tomatoes, crushed walnuts, goat cheese, and drizzle with the dressing.
- Add the cooked lentils to the salad, gently mixing to combine all the ingredients.
- Serve immediately and enjoy your refreshing salad!
Notes
Allowing the salad to chill for about 30 minutes before serving can enhance the flavors. Store any leftovers in an airtight container and consume within 2 days.
