Ingredients
- 2 cups grilled or roasted chicken, diced
- 1 cup sweet corn, grilled or canned
- 1 large cucumber, diced
- ½ cup red onion, finely chopped
- ½ cup mayonnaise
- 2 tablespoons Greek yogurt
- 1 tablespoon lime juice
- 1 tablespoon cilantro, chopped
- 1 teaspoon smoked paprika
- 1 teaspoon salt (to taste)
- ½ teaspoon black pepper
- Optional: crumbled feta cheese for garnish
Instructions
- Grill the chicken until fully cooked, then cool and dice.
- If using fresh corn, grill on medium heat until charred; if using canned corn, drain and rinse.
- Dice cucumber, chop red onion and cilantro.
- In a bowl, whisk together mayonnaise, Greek yogurt, lime juice, paprika, salt, and pepper.
- Combine diced chicken, corn, cucumber, onion, and cilantro with the dressing.
- Taste and adjust seasoning to preference.
- Serve in bowls, garnished with feta if desired.
Notes
For a lighter version, increase the yogurt and reduce mayo. This salad holds up well for meal prep and is perfect for potlucks or light dinners.
