Ingredients

  • 3 cups cooked shredded chicken
  • 3 cups corn (fresh, frozen, or canned)
  • 1 cup sour cream
  • 1 cup shredded cheese (such as cheddar or Mexican blend)

  2. In a large mixing bowl, combine the shredded chicken, corn, sour cream, taco seasoning, diced bell peppers, and half of the shredded cheese. Stir until well combined.
  3. Transfer the mixture into a greased casserole dish and spread it evenly.
  4. Top the casserole with the remaining shredded cheese.
  5. Bake in the preheated oven for about 25-30 minutes, or until the cheese is melted and bubbly.
