Description

A delightful salad combining fresh baby spinach, ripe strawberries, and crispy bacon, all tied together with a creamy poppyseed dressing.


Ingredients

  • 10 ounces Baby Spinach Leaves or Mixed Greens
  • 6 Slices of Crispy Bacon (cut into bite-size pieces)
  • 1/4 Red Onion (thinly sliced)
  • 1 lb. Strawberries (sliced)
  • 3/4 cup Feta Cheese Crumbles
  • 3/4 cup Walnuts
  • 1/2 cup Mayonnaise
  • 3 Tablespoons Apple Cider Vinegar
  • 3 Tablespoons Sugar
  • 1 Tablespoon Grated Onion
  • 2 teaspoons Dijon Mustard
  • 1 Tablespoon Poppyseeds
  • Salt and Pepper to taste


Instructions

  1. Cook the bacon in a skillet over medium heat until crispy. Remove from the pan, let it cool, and cut it into bite-size pieces.
  2. Combine the baby spinach or mixed greens, bacon pieces, thinly sliced red onion, strawberries, crumbled feta cheese, and walnuts in a large salad bowl.
  3. Prepare the poppyseed dressing by mixing the mayonnaise, apple cider vinegar, sugar, grated onion, Dijon mustard, and poppy seeds in a bowl. Season with salt and pepper to taste.
  4. Dress the salad just before serving by pouring the dressing over the ingredients and tossing well to coat.

Notes
