Description

A delightful recipe combining the sweetness of strawberries with savory chicken, creating a visually stunning and delicious dish.


Ingredients

  • 1 tablespoon olive oil
  • 2 boneless, skinless chicken breasts
  • ½ teaspoon sea salt
  • ¼ cup strawberry jam
  • 1 tablespoon good quality balsamic vinegar
  • 1 tablespoon water (extra if the mixture is too thick)
  • ¼ cup fresh basil leaves (cut into ribbons or finely chopped)
  • 2 tablespoons crumbled goat cheese (optional)
  • ¼ cup fresh strawberries (sliced, optional)


Instructions

  1. Heat olive oil in a medium skillet over medium-high heat.
  2. Season chicken breasts with a sprinkle of salt on both sides and place them in the pan. Cook for about 4-5 minutes on one side until a nice golden crust forms. Flip and cook for another 4-5 minutes until fully cooked through.
  3. Meanwhile, whisk together strawberry jam, balsamic vinegar, and water in a small bowl.
  4. When the chicken is just about finished, pour the mixture over the top, nestling the chicken into the sauce and scraping up brown bits from the pan.
  5. Reduce heat and bring to a simmer, letting it bubble for 2-3 minutes until reduced and thickened. Stir in most of the basil and simmer for 1 minute.
  6. Remove the chicken from the pan, pour the sauce over each piece, sprinkle with goat cheese if desired, and garnish with remaining basil and sliced strawberries.

Notes

For best flavor, use high-quality balsamic vinegar and strawberry jam. You can marinate the chicken for extra flavor.
