Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3 large eggs
  • 1 cup granulated sugar
  • 1/2 cup sour cream or Greek yogurt
  • 1/2 cup vegetable oil
  • 2 tbsp unsalted butter, melted
  • 2 tbsp lemon zest (from about 2 lemons)
  • 1/4 cup fresh lemon juice
  • 1 tsp vanilla extract
  • 1/2 tsp lemon extract
  • 1 cup powdered sugar
  • 2-3 tbsp fresh lemon juice (for glaze)
  • 1/2 tsp lemon zest (optional, for garnish)


Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
  2. Whisk together the all-purpose flour, baking powder, baking soda, and salt in a medium bowl.
  3. Add the eggs, granulated sugar, sour cream, vegetable oil, and melted butter to a large mixing bowl. Whisk until smooth.
  4. Stir in the lemon zest, fresh lemon juice, vanilla extract, and lemon extract.
  5. Gradually add the flour mixture to the wet mixture, stirring gently until just combined.
  6. Pour the batter into the prepared loaf pan and bake for 45-50 minutes, until a toothpick inserted comes out clean.
  7. Let the loaf cool in the pan for about 10 minutes before transferring it to a wire rack.
  8. Whisk together the powdered sugar and 2-3 tablespoons of fresh lemon juice until smooth for the glaze.
  9. Drizzle the glaze over the cooled loaf and garnish with lemon zest if desired.
