Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3 large eggs
- 1 cup granulated sugar
- 1/2 cup sour cream or Greek yogurt
- 1/2 cup vegetable oil
- 2 tbsp unsalted butter, melted
- 2 tbsp lemon zest (from about 2 lemons)
- 1/4 cup fresh lemon juice
- 1 tsp vanilla extract
- 1/2 tsp lemon extract
- 1 cup powdered sugar
- 2-3 tbsp fresh lemon juice (for glaze)
- 1/2 tsp lemon zest (optional, for garnish)
Instructions
- Preheat your oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
- Whisk together the all-purpose flour, baking powder, baking soda, and salt in a medium bowl.
- Add the eggs, granulated sugar, sour cream, vegetable oil, and melted butter to a large mixing bowl. Whisk until smooth.
- Stir in the lemon zest, fresh lemon juice, vanilla extract, and lemon extract.
- Gradually add the flour mixture to the wet mixture, stirring gently until just combined.
- Pour the batter into the prepared loaf pan and bake for 45-50 minutes, until a toothpick inserted comes out clean.
- Let the loaf cool in the pan for about 10 minutes before transferring it to a wire rack.
- Whisk together the powdered sugar and 2-3 tablespoons of fresh lemon juice until smooth for the glaze.
- Drizzle the glaze over the cooled loaf and garnish with lemon zest if desired.
