Description

Tender chicken breasts filled with a flavorful spinach and cheese mixture, making it a healthy low carb dinner option.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach, chopped
  • 1 cup cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, combine the chopped spinach, cream cheese, mozzarella cheese, Parmesan cheese, minced garlic, Italian seasoning, salt, and pepper. Mix well until fully combined.
  3. Carefully create a pocket in each chicken breast by slicing into the thickest part without cutting all the way through.
  4. Generously fill each chicken breast pocket with the spinach filling and use toothpicks to secure if necessary.
  5. Heat olive oil in an oven-safe skillet over medium-high heat. Add the stuffed chicken breasts and sear for about 3-4 minutes on each side until golden brown.
  6. Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
  7. Remove from the oven and let the chicken rest for a few minutes before slicing and serving hot.

Notes

Select even-sized chicken breasts for uniform cooking. Use fresh spinach for better flavor.
