Ingredients

  • 1 cup Cottage Cheese
  • 2 tablespoons Olive Oil
  • 1 large Egg
  • 1 cup All-Purpose Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Salt
  • 2 cups Baby Spinach, finely chopped
  • 1 cup Shredded Mozzarella Cheese


Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine cottage cheese, olive oil, and egg; whisk until smooth.
  3. Gradually mix in flour, baking powder, and salt until just combined.
  4. Fold in chopped spinach and shredded mozzarella cheese until evenly distributed.
  5. Shape portions of dough into bagel forms and place on the baking sheet.
  6. Bake for 20-25 minutes until golden brown.
