Ingredients
- 1 cup Cottage Cheese
- 2 tablespoons Olive Oil
- 1 large Egg
- 1 cup All-Purpose Flour
- 1 teaspoon Baking Powder
- 1 teaspoon Salt
- 2 cups Baby Spinach, finely chopped
- 1 cup Shredded Mozzarella Cheese
Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine cottage cheese, olive oil, and egg; whisk until smooth.
- Gradually mix in flour, baking powder, and salt until just combined.
- Fold in chopped spinach and shredded mozzarella cheese until evenly distributed.
- Shape portions of dough into bagel forms and place on the baking sheet.
- Bake for 20-25 minutes until golden brown.
- Allow to cool on a wire rack before serving.
Notes
For a vegan option, replace the egg with ground flaxseed mixed with water. Use almond flour for a gluten-free version.
