Ingredients
- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 2 cups chicken broth
- 2 tablespoons butter
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Optional: chopped parsley for garnish
Instructions
- In a large pot, melt the butter over medium heat.
- Add the chopped onion and sauté until translucent.
- Add the diced potatoes, chicken broth, garlic powder, paprika, salt, and pepper.
- Bring to a boil, then reduce the heat to low and cover.
- Simmer for 20-25 minutes, or until the potatoes are tender.
- Taste and adjust seasoning as needed.
- Serve warm, garnished with chopped parsley if desired.
Notes
For a vegetarian option, use vegetable broth instead of chicken broth. You can also add other vegetables like peas or green beans.
