Ingredients
- 4 cups roasted sweet potatoes
- 1/2 cup maple syrup
- 1/4 cup brown sugar
- 1/2 cup raisins
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 2 cups mini marshmallows
- 1/2 cup chopped pecans
- 2 tablespoons maple syrup (for topping)
- 1 tablespoon coconut oil or vegan butter
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the roasted sweet potatoes, 1/2 cup maple syrup, brown sugar, raisins, cinnamon, and nutmeg. Mash the mixture until you reach your desired consistency.
- Spread the sweet potato mixture into a greased baking dish.
- Top with mini marshmallows and pecans drizzled with 2 tablespoons of maple syrup.
- Bake for 25-30 minutes until heated through and the marshmallows are golden brown.

Notes
