Description
Deliciously soft and moist banana muffins filled with chocolate chips, perfect for breakfast or as a snack.
Ingredients
- 2 ripe bananas, mashed
- 1/3 cup melted butter
- 1 teaspoon baking soda
- Pinch of salt
- 3/4 cup sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a mixing bowl, mash the ripe bananas with a fork until smooth.
- Stir the melted butter into the mashed bananas.
- Mix in the baking soda and salt.
- Stir in the sugar, beaten egg, and vanilla extract.
- Add the flour and mix until just combined, then fold in the chocolate chips.
- Fill the muffin cups about 2/3 full with the batter.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let the muffins cool for a few minutes before transferring them to a wire rack.
Notes
For added decoration, sprinkle some extra chocolate chips on top before baking. Store in an airtight container at room temperature for 3-4 days or freeze for up to 2 months.
