Ingredients

  • 4 skin-on chicken thighs (about 1.5 lbs)
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1/4 cup all-purpose flour
  • 2 tsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp smoked paprika
  • 1 tsp fresh thyme (or 1/2 tsp dried thyme)
  • 2 tbsp soy sauce


Instructions

  1. Season the chicken thighs with salt, pepper, and smoked paprika, and let sit at room temperature for 15-20 minutes.
  2. Heat olive oil over medium heat in a large skillet. Add sliced onions and sauté until translucent, about 5 minutes.
  3. Add minced garlic and cook for another minute until fragrant.
  4. Add the seasoned chicken thighs, skin-side down, and brown for about 5 minutes on each side. Remove chicken temporarily and set aside.
  5. Sprinkle flour into the drippings in the skillet and stir to create a roux, cooking for about 2 minutes.
  6. Gradually whisk in chicken broth and soy sauce, making a smooth mixture.
  7. Once thickened, pour in heavy cream and stir until well combined.
  8. Add thyme and return chicken thighs to the skillet. Cover and simmer on low heat for 20-25 minutes until chicken is tender and cooked through.
