Ingredients
- 4 skin-on chicken thighs (about 1.5 lbs)
- 1 medium onion, sliced
- 3 cloves garlic, minced
- 2 cups low-sodium chicken broth
- 1 cup heavy cream
- 1/4 cup all-purpose flour
- 2 tsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp smoked paprika
- 1 tsp fresh thyme (or 1/2 tsp dried thyme)
- 2 tbsp soy sauce
Instructions
- Season the chicken thighs with salt, pepper, and smoked paprika, and let sit at room temperature for 15-20 minutes.
- Heat olive oil over medium heat in a large skillet. Add sliced onions and sauté until translucent, about 5 minutes.
- Add minced garlic and cook for another minute until fragrant.
- Add the seasoned chicken thighs, skin-side down, and brown for about 5 minutes on each side. Remove chicken temporarily and set aside.
- Sprinkle flour into the drippings in the skillet and stir to create a roux, cooking for about 2 minutes.
- Gradually whisk in chicken broth and soy sauce, making a smooth mixture.
- Once thickened, pour in heavy cream and stir until well combined.
- Add thyme and return chicken thighs to the skillet. Cover and simmer on low heat for 20-25 minutes until chicken is tender and cooked through.
Notes
Use fresh ingredients for maximum flavor. Avoid rushing the browning step for better texture.
