Description

A comforting and versatile meal made with tender pulled chicken, perfect for sandwiches, tacos, or salads.

Ingredients

  • 11.5 lb. boneless skinless chicken breast
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1/8 teaspoon ground paprika
  • 1 teaspoon Italian seasoning
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 2/3 cup BBQ sauce (divided)
  • 3 tablespoons water or chicken broth
  • 1 teaspoon apple cider vinegar
  • 2 cups favorite slaw mix
  • 1/4 medium red onion (thinly sliced)
  • 1 tablespoon pickle juice
  • 1/2 tablespoon lime juice
  • Salt (to taste)
  • 4 hamburger buns of choice
  • 1/4 cup BBQ sauce (or more to taste)
  • Pickles (to taste)

Instructions

  1. Prepare the chicken: Place the boneless, skinless chicken breasts at the bottom of your slow cooker.
  2. Mix the spices: In a small bowl, combine chili powder, garlic powder, ground paprika, Italian seasoning, salt, and pepper. Sprinkle this mix evenly over the chicken.
  3. Add sauces: Pour in 1/3 cup of BBQ sauce, water or chicken broth, and apple cider vinegar over the chicken. Mix gently to coat the chicken.
  4. Set the slow cooker: Cover and set it to low for 6-7 hours or high for 3-4 hours.
  5. Prepare the slaw: Combine slaw mix, red onion, pickle juice, lime juice, and salt in a bowl. Mix well and set aside.
  6. Shred the chicken: Once cooked, remove the chicken from the slow cooker and shred it with two forks. Return to the slow cooker and mix with remaining BBQ sauce.
  7. Assemble your sandwiches: Serve pulled chicken on buns and top with slaw and pickles. Enjoy!
