Ingredients

  • 2-3 pounds pork shoulder
  • 1 can (about 20 oz) pineapple chunks (in juice)
  • 1/3 cup soy sauce
  • 1/4 cup brown sugar
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 medium onion, sliced
  • 1 bell pepper (any color), sliced
  • Salt and pepper to taste


Instructions

  1. Place the pork shoulder in the slow cooker.
  2. In a bowl, mix together pineapple chunks, soy sauce, brown sugar, minced garlic, and ginger.
  3. Pour the mixture over the pork.
  4. Add sliced onion and bell pepper.
  5. Season with salt and pepper.
  6. Cover and cook on low for 6-8 hours or until the pork is tender.
  7. Shred the pork and serve with the sauce.
