Ingredients
- 2-3 pounds pork shoulder
- 1 can (about 20 oz) pineapple chunks (in juice)
- 1/3 cup soy sauce
- 1/4 cup brown sugar
- 4 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 medium onion, sliced
- 1 bell pepper (any color), sliced
- Salt and pepper to taste
Instructions
- Place the pork shoulder in the slow cooker.
- In a bowl, mix together pineapple chunks, soy sauce, brown sugar, minced garlic, and ginger.
- Pour the mixture over the pork.
- Add sliced onion and bell pepper.
- Season with salt and pepper.
- Cover and cook on low for 6-8 hours or until the pork is tender.
- Shred the pork and serve with the sauce.
