Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 8 ounces fettuccine pasta
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Place the chicken breasts in the slow cooker.
  2. In a bowl, combine the heavy cream, chicken broth, Parmesan cheese, garlic, Italian seasoning, salt, and pepper. Pour this mixture over the chicken in the slow cooker.
  3. Cover and cook on low for 360 minutes or high for 180 minutes.
  4. About 30 minutes before serving, cook the fettuccine pasta according to package instructions.
  5. Once the chicken is cooked, shred it using two forks.
  6. Stir the shredded chicken back into the sauce and add the cooked pasta.
  7. Mix well to combine and serve hot, garnished with fresh parsley.

Notes

For added flavor, consider marinating the chicken in Italian herbs for a few hours before cooking. You can replace the fettuccine with any pasta of your choice. For a thicker sauce, cook uncovered for the last 30 minutes. Adding broccoli or spinach in the last hour of cooking boosts nutrition.
