Description
A delightful slow cooker dish featuring tender beef, ramen noodles, and vegetables in a rich broth, perfect for busy nights or leisurely weekends.
Ingredients
- 1 pound beef (chuck or brisket)
- 4 cups beef broth
- 2 cups water
- 2 packs of ramen noodles
- 2 tablespoons soy sauce
- 1 tablespoon miso paste
- 1 tablespoon sesame oil
- 2 chopped green onions
- 1 cup mushrooms (sliced)
- 1 cup bok choy (chopped)
- Salt and pepper to taste
- Optional toppings: soft-boiled eggs, nori, chili oil
Instructions
- Add the beef, beef broth, water, soy sauce, miso paste, and sesame oil to a slow cooker.
- Set on low and cook for 6-8 hours, or until the beef is tender.
- Remove the beef, shred it with forks, and return it to the pot.
- Add the mushrooms and bok choy to the slow cooker, and cook on high for another 30 minutes.
- Prepare the ramen noodles according to package instructions.
- Serve the ramen noodles in bowls, ladle hot broth and beef mixture over the noodles, and add optional toppings as desired.
Notes
Use fresh ingredients and adjust seasoning to taste. For added nutrition, feel free to include other vegetables.
