Description

A hearty dish made in the slow cooker featuring tender beef, rich flavors, and served over toasted bread with creamy mashed potatoes.

Ingredients

  • 2 pounds beef roast (chuck or round)
  • 1 medium onion, sliced
  • 2 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • 6 slices bread (white or Texas toast)
  • 4 cups mashed potatoes

Instructions

  1. Prepare the Ingredients: Slice the onion and prepare the beef roast, trimming excess fat if desired.
  2. Layer in the Slow Cooker: Place sliced onions at the bottom of the slow cooker and lay the beef roast on top.
  3. Add Seasonings and Fluid: In a bowl, mix beef broth, Worcestershire sauce, soy sauce, garlic powder, onion powder, thyme, black pepper, and salt. Pour this mixture over the beef roast.
  4. Cook Low and Slow: Cover and cook on low for 6-8 hours, or on high for 4-5 hours, until the beef is fork-tender.
  5. Thicken the Sauce: Once cooked, remove the beef, mix cornstarch with cold water to create a slurry, stir it into the cooking liquid, and let it thicken for 10-15 minutes.
  6. Prepare the Bread and Potatoes: Toast the bread until golden brown; prepare mashed potatoes according to instructions.
  7. Serve: Slice the beef, serve it on the toasted bread with mashed potatoes on the side, and spoon sauce over the dish.

Notes

Consider adding vegetables like carrots or celery for added nutrition. You can also experiment with different types of bread.
