Description

Festive and customizable cookies that are easy to make and decorate, perfect for holiday gatherings.


Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 3/4 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon kosher salt
  • Food coloring gel or natural, optional


Instructions

  1. In a large bowl, cream the softened unsalted butter and granulated sugar until light and fluffy, about 3 to 5 minutes.
  2. Beat in the eggs one at a time, then add the vanilla extract.
  3. In a separate bowl, whisk together the flour, baking powder, and kosher salt.
  4. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
  5. Divide the dough in half and, if desired, add food coloring.
  6. Shape each half into a log, wrap tightly in plastic wrap, and chill for at least 3 hours.
  7. Preheat the oven to 375°F (190°C).
  8. Slice the chilled logs into 1/4 inch rounds and place them on baking sheets.
  9. Bake for 8 to 11 minutes until the edges are golden.
  10. Cool on baking sheets before transferring to wire racks.

Notes

Make sure your butter is softened for easier mixing. Chill the dough for longer if you want firmer slices. Use a sharp knife to get clean, even slices.
