Ingredients
- 2 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 3/4 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon kosher salt
- Food coloring gel or natural, optional
Instructions
- In a large bowl, cream the softened unsalted butter and granulated sugar until light and fluffy, about 3 to 5 minutes.
- Beat in the eggs one at a time, then add the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and kosher salt.
- Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
- Divide the dough in half and, if desired, add food coloring.
- Shape each half into a log, wrap tightly in plastic wrap, and chill for at least 3 hours.
- Preheat the oven to 375°F (190°C).
- Slice the chilled logs into 1/4 inch rounds and place them on baking sheets.
- Bake for 8 to 11 minutes until the edges are golden.
- Cool on baking sheets before transferring to wire racks.
Notes
Make sure your butter is softened for easier mixing. Chill the dough for longer if you want firmer slices. Use a sharp knife to get clean, even slices.
