Description

A delightful dish combining smoky sausage and cheese-filled tortellini, roasted on a single sheet pan for an easy weeknight meal.


Ingredients

  • Fresh or frozen cheese-filled tortellini – 12 oz
  • Pre-cooked smoked sausage – 12 oz, sliced into bite-sized rounds
  • Bell peppers – 2 medium, cut into strips
  • Red onion – 1 medium, thinly sliced
  • Cherry tomatoes – 1 cup, halved
  • Olive oil – 2 tablespoons
  • Italian seasoning – 1 teaspoon
  • Garlic powder – 1/2 teaspoon
  • Salt – 1/2 teaspoon (or to taste)
  • Black pepper – 1/4 teaspoon (or to taste)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the smoked sausage into bite-sized rounds. Chop the bell peppers into strips, thinly slice the red onion, and halve the cherry tomatoes.
  3. On a large rimmed sheet pan, spread out the sausage, bell peppers, red onion, and cherry tomatoes. Drizzle with olive oil, then sprinkle with Italian seasoning, garlic powder, salt, and black pepper. Toss gently to coat.
  4. Place the sheet pan in the preheated oven and roast for 15 minutes.
  5. Remove the pan and evenly scatter the cheese tortellini among the sausage and vegetables. Drizzle a little more olive oil and toss gently to combine. Return the pan to the oven and roast for another 10-12 minutes.
  6. Once cooked, let the sheet pan cool for a few minutes before serving. Garnish with fresh basil or parsley if desired.

Notes

Ensure even cooking by slicing ingredients uniformly. For added crispiness, broil for a couple of minutes after roasting.
