A delightful combination of savory sausage, sweet potatoes, and vibrant broccoli, all roasted with a sweet and tangy honey garlic sauce, perfect for busy weeknights.
Ingredients
- 14 oz chicken or turkey sausage, sliced 1/2-inch thick
- 2 medium sweet potatoes, peeled and cubed (1/2-inch)
- 2 cups broccoli florets (1/2-inch)
- 1 tablespoon unsalted butter (or olive oil)
- 4 cloves garlic, minced
- 1/4 cup honey
- 1/4 cup low-sodium soy sauce (or coconut aminos for a gluten-free option)
- 1 tablespoon apple cider vinegar
- Kosher salt and black pepper, to taste
- 2 tablespoons minced fresh parsley
Instructions
- Preheat the oven to 400°F (200°C).
- Line a large sheet pan with parchment paper.
- In the prepared pan, combine the sliced sausage, cubed sweet potatoes, and broccoli florets, spreading them out in a single layer.
- In a small saucepan, melt the unsalted butter (or olive oil) over medium heat. Add the minced garlic and sauté for 30–60 seconds until fragrant. Stir in the honey, low-sodium soy sauce (or coconut aminos), apple cider vinegar, salt, and pepper, and allow to simmer for 2–3 minutes.
- Pour the honey garlic sauce over the sausage and vegetables, tossing to coat thoroughly. Roast for 25–30 minutes in the oven, stirring once halfway through.
- Once out of the oven, sprinkle with fresh parsley before serving.
Notes
Feel free to add other vegetables like bell peppers or carrots. Store leftovers in an airtight container in the fridge for up to 4 days, or freeze for up to 3 months.
