A quick and delicious dish featuring tender tortellini, vibrant broccoli, and juicy tomatoes baked with gooey mozzarella cheese.
Ingredients
- 1 package tortellini (fresh or frozen)
- 2 cups broccoli florets
- 1 cup cherry tomatoes, halved
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup shredded mozzarella cheese
- Parmesan cheese for serving (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Toss broccoli florets and cherry tomatoes with olive oil, garlic powder, Italian seasoning, salt, and pepper on a sheet pan.
- Spread the vegetables evenly on the sheet pan.
- Bake in the oven for 15 minutes.
- Add the tortellini to the sheet pan and mix gently to combine with the vegetables.
- Bake for an additional 15-20 minutes, or until the tortellini is cooked and veggies are tender.
- Remove from the oven and sprinkle with mozzarella cheese.
- Return to the oven for 5 minutes until cheese is melted.
Notes
Use fresh ingredients for best flavor. Don’t overcrowd the pan to prevent steaming.
