Description

A quick and delicious dish featuring tender tortellini, vibrant broccoli, and juicy tomatoes baked with gooey mozzarella cheese.


Ingredients

  • 1 package tortellini (fresh or frozen)
  • 2 cups broccoli florets
  • 1 cup cherry tomatoes, halved
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese
  • Parmesan cheese for serving (optional)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss broccoli florets and cherry tomatoes with olive oil, garlic powder, Italian seasoning, salt, and pepper on a sheet pan.
  3. Spread the vegetables evenly on the sheet pan.
  4. Bake in the oven for 15 minutes.
  5. Add the tortellini to the sheet pan and mix gently to combine with the vegetables.
  6. Bake for an additional 15-20 minutes, or until the tortellini is cooked and veggies are tender.
  7. Remove from the oven and sprinkle with mozzarella cheese.
  8. Return to the oven for 5 minutes until cheese is melted.

Notes

Use fresh ingredients for best flavor. Don’t overcrowd the pan to prevent steaming.
