Description

A comforting sweet potato soup with Italian flavors, rich in nutrients and perfect for cozy meals.


Ingredients

  • 2 large sweet potatoes, peeled and cubed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can (14 oz) diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Olive oil for roasting
  • Fresh parsley for garnish


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the cubed sweet potatoes with olive oil, salt, and pepper, and spread them on a baking sheet. Roast for about 25-30 minutes until golden and tender.
  3. In a large pot, heat a little olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent.
  4. Add the roasted sweet potatoes, vegetable broth, diced tomatoes, oregano, and basil to the pot. Bring to a boil, then reduce heat and simmer for 15-20 minutes.
  5. Using an immersion blender, carefully blend the soup until smooth. Alternatively, transfer it in batches to a blender.
  6. Taste and adjust seasoning with salt and pepper as needed. Serve hot, garnished with fresh parsley.

Notes

For a creamier soup, add more vegetable broth during blending. Use fresh herbs for enhanced flavor.
