A comforting sweet potato soup with Italian flavors, rich in nutrients and perfect for cozy meals.
Ingredients
- 2 large sweet potatoes, peeled and cubed
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 can (14 oz) diced tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Olive oil for roasting
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the cubed sweet potatoes with olive oil, salt, and pepper, and spread them on a baking sheet. Roast for about 25-30 minutes until golden and tender.
- In a large pot, heat a little olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent.
- Add the roasted sweet potatoes, vegetable broth, diced tomatoes, oregano, and basil to the pot. Bring to a boil, then reduce heat and simmer for 15-20 minutes.
- Using an immersion blender, carefully blend the soup until smooth. Alternatively, transfer it in batches to a blender.
- Taste and adjust seasoning with salt and pepper as needed. Serve hot, garnished with fresh parsley.
Notes
For a creamier soup, add more vegetable broth during blending. Use fresh herbs for enhanced flavor.
