A delightful dessert that combines cheesecake, warm spiced apples, and salted caramel, perfect for any occasion.
Ingredients
- 4 medium apples, sliced
- 3 tbsp salted butter
- 1-2 tbsp apple cider
- 1/3 cup light brown sugar, packed
- 1 and 1/4 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp ground cloves
- 1/8 tsp allspice
- 1-2 tsp lemon juice (to taste)
- 2 tsp cornstarch
- 2 tsp water
- 3 cups cinnamon graham cracker crumbs
- 1/2 cup + 3 tbsp salted butter, melted
- 32 ounces cream cheese, at room temperature
- 1 and 1/2 cups granulated sugar
- 4 large eggs, at room temperature
- 2 tsp vanilla extract
- 1 and 1/2 tsp cornstarch
- 3/4 cup full-fat sour cream, at room temperature
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/8 tsp ground cloves
- 1/4 cup all-purpose flour
- 1/2 cup old-fashioned whole rolled oats
- 1/4 cup brown sugar, packed
- 1/2 tsp cinnamon
- 1/8 tsp salt
- 1/4 cup cold salted butter, cubed
- 1 cup granulated sugar
- 6 tbsp salted butter, cubed
- 1/2 cup + 1 tbsp heavy cream
- Pinch of flaky sea salt
Instructions
- Read through the recipe before you begin to ensure you have everything you need. You can break this recipe into multiple days if desired.
- Peel and slice your apples, then combine with all apple filling ingredients in a medium pan over medium-high heat. Cook for 8-14 minutes, stirring occasionally.
- Preheat your oven to 350°F and spray a 9-inch springform pan with nonstick spray.
- Stir together the crust ingredients and press them into the pan and up the sides. Bake for 10 minutes.
- Beat the cream cheese in a large bowl until creamy, then add sugar and mix well. Add eggs one at a time, mixing after each.
- Pour half of the batter into the baked crust, layer with the apple filling, and then pour the remaining batter on top.
- Place a large pot of water on the stove to boil and set the cheesecake pan on a rack above a roasting pan in the oven.
- Bake the cheesecake for 90 to 110 minutes, until the edges are set and the center wobbles slightly.
- Let the cheesecake cool for 1 hour, then refrigerate for at least 6 hours.
- Preheat</strong] the oven for the crumble topping and bake for 12-20 minutes until golden.
- Top the cheesecake with apple pie topping, crumble topping, and drizzle with salted caramel before serving.
Notes
Make-ahead tips: Apple filling can be prepared a day in advance. Caramel sauce lasts 5 days in the fridge.
