Ingredients
- 2 salmon fillets
- 1 ripe mango, diced
- 1/2 red bell pepper, diced
- 1/4 red onion, finely chopped
- 1 lime, juiced
- 2 tablespoons fresh cilantro, chopped
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat the grill or a skillet over medium heat.
- Season the salmon fillets with salt and pepper and drizzle with olive oil.
- Grill or cook the fillets for about 4-5 minutes on each side or until cooked through.
- While the salmon cooks, combine mango, red bell pepper, red onion, lime juice, and cilantro in a bowl. Stir gently to mix.
- Serve the salmon topped with the mango salsa.
Notes
Choose wild-caught salmon for better flavor. Store leftovers in separate airtight containers, with salmon lasting 3 days and salsa ideally consumed within 2 days.
