- Rye bread
- Avocado
- Eggs
- Salt
- Pepper

- Cherry tomatoes

Instructions
- Boil water in a saucepan and gently add eggs, cooking for 6-8 minutes for soft-boiled. Remove and place them in cold water.
- Toast slices of rye bread until golden brown.
- Mash the avocado in a bowl and season with salt and pepper.
- Peel the soft-boiled eggs and cut in half.
- Spread mashed avocado on toasted rye bread.
- Top with soft-boiled egg halves.
- Drizzle with olive oil and add sliced cherry tomatoes on the side.
- Sprinkle with fresh herbs if desired and serve.
Notes
Best enjoyed immediately while the toast is warm and the eggs are soft. Store components separately if you have leftovers.
