Ingredients

  • Rye bread
  • Avocado
  • Eggs
  • Salt
  • Pepper
  • Olive oil
  • Cherry tomatoes
  • Fresh herbs (optional)


Instructions

  1. Boil water in a saucepan and gently add eggs, cooking for 6-8 minutes for soft-boiled. Remove and place them in cold water.
  2. Toast slices of rye bread until golden brown.
  3. Mash the avocado in a bowl and season with salt and pepper.
  4. Peel the soft-boiled eggs and cut in half.
  5. Spread mashed avocado on toasted rye bread.
  6. Top with soft-boiled egg halves.
  7. Drizzle with olive oil and add sliced cherry tomatoes on the side.
  8. Sprinkle with fresh herbs if desired and serve.

Notes
