Description

A comforting and flavorful roasted tomato soup, perfect for chilly days and easy to make.


Ingredients

  • 2 pounds ripe tomatoes, halved
  • 1 onion, chopped
  • 4 cloves garlic, peeled
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried basil
  • 1/2 cup heavy cream (optional)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Arrange tomatoes, onion, and garlic in a single layer on a baking sheet. Drizzle with olive oil, and season with salt and pepper.
  3. Roast in the oven for 30-35 minutes, or until the tomatoes are caramelized.
  4. Transfer the roasted vegetables to a large pot and add vegetable broth and basil.
  5. Blend the mixture with an immersion blender until smooth.
  6. If desired, stir in heavy cream for a richer flavor.
  7. Simmer for another 10 minutes, then taste and adjust seasoning as needed.
  8. Serve warm, garnished with fresh basil or croutons.

Notes

For the best flavor, choose ripe tomatoes. You can also add smoked paprika for a smoky touch or other vegetables for added nutrients.
