Delicious roasted sweet potatoes that can be customized with various spices, perfect as a side dish.
Ingredients
- 2 pounds sweet potatoes, peeled and cut into 1/2-inch pieces
- 2 tablespoons melted coconut oil
- 3/4 teaspoon fine sea salt
- 1 tablespoon light brown sugar, firmly packed
- For seasoned roasted sweet potatoes:
- 2 tablespoons olive oil
- 3/4 teaspoon fine sea salt
- 1/4 teaspoon pepper
- 1/2 teaspoon ground chili powder
- 1/2 teaspoon paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon garlic powder
Instructions
- Preheat your oven to 425°F (220°C).
- Peel and cube the sweet potatoes into 1/2-inch pieces.
- Add the sweet potatoes to your largest sheet pan.
- Pour the melted coconut oil over the sweet potatoes, sprinkle with salt and brown sugar, and toss to coat.
- Spread them out in a single layer without overlapping.
- Flip every 10 minutes, cooking for a total of 30 minutes or until fork-tender and golden brown.
- For seasoned sweet potatoes, repeat steps 1-5, drizzling olive oil and adding seasonings before tossing.
Notes
Great with various spices; consider adding a squeeze of fresh lime or lemon juice before serving.
