Description

Delicious roasted sweet potatoes that can be customized with various spices, perfect as a side dish.


Ingredients

  • 2 pounds sweet potatoes, peeled and cut into 1/2-inch pieces
  • 2 tablespoons melted coconut oil
  • 3/4 teaspoon fine sea salt
  • 1 tablespoon light brown sugar, firmly packed
  • For seasoned roasted sweet potatoes:
  • 2 tablespoons olive oil
  • 3/4 teaspoon fine sea salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon ground chili powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon garlic powder


Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel and cube the sweet potatoes into 1/2-inch pieces.
  3. Add the sweet potatoes to your largest sheet pan.
  4. Pour the melted coconut oil over the sweet potatoes, sprinkle with salt and brown sugar, and toss to coat.
  5. Spread them out in a single layer without overlapping.
  6. Flip every 10 minutes, cooking for a total of 30 minutes or until fork-tender and golden brown.
  7. For seasoned sweet potatoes, repeat steps 1-5, drizzling olive oil and adding seasonings before tossing.

Notes

Great with various spices; consider adding a squeeze of fresh lime or lemon juice before serving.
