Description

A delightful twist on traditional beef stroganoff that features tender chicken, creamy sauce, and earthy mushrooms, perfect for any occasion.


Ingredients

  • 1 lb chicken breast, diced
  • 2 cups mushrooms, sliced
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup sour cream
  • 2 tablespoons flour
  • 3 tablespoons olive oil or butter
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Egg noodles, rice, or mashed potatoes (for serving)


Instructions

  1. Heat the olive oil or butter in a large skillet over medium heat.
  2. Add the diced chicken breast and season with salt and pepper. Sauté until browned, about 5–7 minutes. Remove and set aside.
  3. In the same skillet, add the onion and mushrooms. Cook until onions are translucent, about 5 minutes.
  4. Stir in minced garlic and cook for an additional 1 minute until fragrant.
  5. Sprinkle flour over the mixture and stir to combine, cooking for 1–2 minutes to eliminate raw taste.
  6. Gradually pour in chicken broth, stirring constantly until smooth. Bring to a simmer to thicken for 3–5 minutes.
  7. Reduce heat to low, add sour cream and paprika, mixing until combined.
  8. Add chicken back in and cook for another 2–3 minutes to heat through.
  9. Taste and adjust seasoning if necessary.
  10. Serve over egg noodles, rice, or mashed potatoes, garnished with chopped parsley.
