Ingredients
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 tablespoon red food coloring
- Oreo cookies (for filling or decoration)
Instructions
- Preheat the oven to 350°F (175°C).
- Cream together the softened butter and sugar until light and fluffy.
- Beat in the egg and vanilla extract.
- Mix together the flour, cocoa powder, baking powder, baking soda, and salt in another bowl.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Stir in the red food coloring until the batter is evenly colored.
- Drop spoonfuls of dough onto a baking sheet lined with parchment paper, placing an Oreo cookie in the center of each.
- Bake for about 10-12 minutes, or until the edges are set.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For added flavor, sandwich two cookies with cream cheese frosting. Store in an airtight container for up to a week.
