Description

A simple and tasty dish that combines mixed veggies with creamy ranch dressing and crunchy cheesy breadcrumbs.


Ingredients

  • 4 cups mixed vegetables (broccoli, cauliflower, and carrots)
  • 1 cup ranch dressing
  • 1 cup shredded cheddar cheese
  • 1 cup breadcrumbs
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the mixed vegetables, ranch dressing, garlic powder, onion powder, salt, and pepper.
  3. Transfer the mixture to a baking dish.
  4. In another bowl, mix breadcrumbs with olive oil and cheddar cheese, then sprinkle it evenly over the vegetable mixture.
  5. Bake in the preheated oven for 25-30 minutes or until the topping is golden brown and the vegetables are tender.
  6. Garnish with fresh parsley if desired before serving.

Notes

Feel free to use any mixed vegetables you like or have on hand. To make it healthier, use a low-fat ranch dressing.
