Ingredients
- 4 cups mixed vegetables (broccoli, cauliflower, and carrots)
- 1 cup ranch dressing
- 1 cup shredded cheddar cheese
- 1 cup breadcrumbs
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the mixed vegetables, ranch dressing, garlic powder, onion powder, salt, and pepper.
- Transfer the mixture to a baking dish.
- In another bowl, mix breadcrumbs with olive oil and cheddar cheese, then sprinkle it evenly over the vegetable mixture.
- Bake in the preheated oven for 25-30 minutes or until the topping is golden brown and the vegetables are tender.
- Garnish with fresh parsley if desired before serving.
Notes
Feel free to use any mixed vegetables you like or have on hand. To make it healthier, use a low-fat ranch dressing.
