Ingredients
- 1 medium pumpkin
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 2 carrots, chopped
- 2 potatoes, diced
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Cut the pumpkin in half, remove the seeds, and scoop out the flesh.
- In a large pot, sauté the onion and garlic until translucent.
- Add the carrots and potatoes, stirring for a couple of minutes.
- Add the pumpkin flesh and vegetable broth, and bring to a boil.
- Reduce heat, add thyme, salt, and pepper, and let simmer for 30-40 minutes until vegetables are tender.
- Blend until smooth if desired. Serve warm.
Notes
For a creamier texture, blend a portion of the stew before serving. Adjust seasoning as preferred.
