Description

A comforting and nutritious pumpkin stew, perfect for chilly days, packed with vitamins and minerals.


Ingredients

  • 1 medium pumpkin
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 carrots, chopped
  • 2 potatoes, diced
  • 1 teaspoon thyme
  • Salt and pepper to taste


Instructions

  1. Cut the pumpkin in half, remove the seeds, and scoop out the flesh.
  2. In a large pot, sauté the onion and garlic until translucent.
  3. Add the carrots and potatoes, stirring for a couple of minutes.
  4. Add the pumpkin flesh and vegetable broth, and bring to a boil.
  5. Reduce heat, add thyme, salt, and pepper, and let simmer for 30-40 minutes until vegetables are tender.
  6. Blend until smooth if desired. Serve warm.

Notes

For a creamier texture, blend a portion of the stew before serving. Adjust seasoning as preferred.
