Description

A warm and comforting pumpkin soup that’s easy to make and perfect for fall gatherings.


Ingredients

  • 2 cups pumpkin puree
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1/2 teaspoon nutmeg
  • Salt and pepper to taste
  • 1 cup heavy cream (optional)
  • Fresh parsley for garnish


Instructions

  1. In a slow cooker, combine pumpkin puree, chopped onion, minced garlic, vegetable broth, cumin, nutmeg, salt, and pepper. Stir well.
  2. Cover and cook on low for 360-480 minutes or until the onions are soft.
  3. If using, stir in the heavy cream just before serving for a richer flavor.
  4. Serve hot, garnished with fresh parsley.

Notes

For a smoother texture, blend the soup with an immersion blender. Adjust spices to your taste, and consider using fresh pumpkin for more robust flavor.
