A warm and comforting pumpkin soup that’s easy to make and perfect for fall gatherings.
Ingredients
- 2 cups pumpkin puree
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon ground cumin
- 1/2 teaspoon nutmeg
- Salt and pepper to taste
- 1 cup heavy cream (optional)
- Fresh parsley for garnish
Instructions
- In a slow cooker, combine pumpkin puree, chopped onion, minced garlic, vegetable broth, cumin, nutmeg, salt, and pepper. Stir well.
- Cover and cook on low for 360-480 minutes or until the onions are soft.
- If using, stir in the heavy cream just before serving for a richer flavor.
- Serve hot, garnished with fresh parsley.
Notes
For a smoother texture, blend the soup with an immersion blender. Adjust spices to your taste, and consider using fresh pumpkin for more robust flavor.
