Ingredients
- 2 cups roasted pumpkin
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon ground nutmeg
- Salt and pepper to taste
- 1 tablespoon olive oil
- Cream or yogurt for garnish (optional)
Instructions
- In a large pot, heat olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until soft.
- Add the roasted pumpkin and vegetable broth to the pot; bring the mixture to a boil.
- Stir in ground cumin, nutmeg, salt, and pepper.
- Reduce the heat and let it simmer for about 20 minutes.
- Use an immersion blender to puree the soup until smooth.
- Serve warm, garnished with cream or yogurt if desired.
Notes
For a smoother texture, blend the soup longer until entirely creamy. Adjust the seasonings to your taste. Can add a splash of apple cider or maple syrup for sweetness.
