Description

A comforting pumpkin soup perfect for chilly days, packed with delightful flavors and nutrients.


Ingredients

  • 2 cups roasted pumpkin
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon ground nutmeg
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Cream or yogurt for garnish (optional)


Instructions

  1. In a large pot, heat olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until soft.
  2. Add the roasted pumpkin and vegetable broth to the pot; bring the mixture to a boil.
  3. Stir in ground cumin, nutmeg, salt, and pepper.
  4. Reduce the heat and let it simmer for about 20 minutes.
  5. Use an immersion blender to puree the soup until smooth.
  6. Serve warm, garnished with cream or yogurt if desired.

Notes

For a smoother texture, blend the soup longer until entirely creamy. Adjust the seasonings to your taste. Can add a splash of apple cider or maple syrup for sweetness.
