Description

Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • ½ teaspoon salt
  • 1 cup canned pumpkin puree
  • 1 cup granulated sugar
  • ½ cup vegetable oil
  • 1 large egg
  • 1 teaspoon milk
  • 1 tablespoon pure vanilla extract
  • 2 cups semisweet chocolate chips


Instructions

  1. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper or a silicone mat.
  2. In a medium bowl, whisk together the flour, baking powder, ground cinnamon, nutmeg, and salt.
  3. In a large bowl, beat together pumpkin, sugar, vegetable oil, egg, and vanilla extract until combined.
  4. In a separate small bowl, dissolve baking soda in milk and add to the pumpkin mixture.
  5. Add in the flour mixture and mix until just combined. Stir in chocolate chips.
  6. Using a cookie scoop, place scoops of dough onto prepared sheets and bake for 10-12 minutes or until lightly brown and firm.
  7. Let cool completely on a wire rack.

Notes

For the best flavor, use pure pumpkin puree, not pumpkin pie filling. For a richer taste, consider using dark chocolate chips instead of semisweet.
