Description

A hearty and flavorful Filipino stew made with tender pork, liver, and a colorful medley of vegetables.


Ingredients

  • 750g pork (cut into bite-sized pieces)
  • 2 1⁄2 tbsp lemon extract/juice
  • 300g pork liver (cut into small pieces)
  • 1 tbsp lemon extract/juice
  • Ground black pepper (to taste)
  • Soy sauce (to taste)
  • 2 pcs chorizo/sausage (sliced)
  • 9 pcs potato marbles (or regular diced potatoes)
  • 2 small carrots (sliced)
  • 1 medium onion (chopped)
  • 4 cloves garlic (minced)
  • 1 bell pepper (sliced)
  • 6 tomatoes (chopped)
  • 2 bay leaves
  • 2 cups hot water
  • 1⁄3 cup tomato sauce
  • 1⁄4 cup green peas
  • 1⁄4 cup dried raisins
  • Cooking oil
  • Salt (to taste)
  • Cheese (for topping)


Instructions

  1. Marinate the pork and liver separately in lemon extract, soy sauce, and black pepper for 1 hour.
  2. Heat oil in a pan and fry the carrots and potatoes until lightly browned, then set aside.
  3. In the same pan, fry the marinated pork liver for about 3 minutes and set aside.
  4. Sauté minced garlic and chopped onion until aromatic, then add chopped tomatoes and bell pepper.
  5. Add the marinated pork and bay leaves; sauté for 5 minutes.
  6. Pour in the marinade sauce and simmer for another 5 minutes.
  7. Add tomato sauce and hot water, cover, and simmer for 20 minutes until pork is tender.
  8. Add back the carrots, potatoes, and raisins; simmer until vegetables are cooked.
  9. Finally, add fried pork liver, chorizo, and green peas; simmer for 5 minutes.
  10. Sprinkle with grated cheese and add salt to taste.

Notes

Marinate the pork and liver overnight for enhanced flavor. Adjust the cooking time based on the size of pork pieces.
