Description
Delightful Filipino treat featuring a sweet purple yam filling, perfect for snacks or dessert.
Ingredients
- 3 cups all-purpose flour
- 6 tbsp vegetable oil
- 1 tsp salt
- 1 cup water
- 1 medium-sized purple yam (ube)
- Water for boiling
- 1 cup sugar
- 2 tbsp butter
- 1 cup all-purpose flour (for the filling)
- A bit of water (for sealing)
- Sesame seeds (for topping)
Instructions
- In a mixing bowl, combine 3 cups of all-purpose flour, 6 tablespoons of vegetable oil, 1 teaspoon of salt, and 1 cup of water. Mix until combined.
- Knead the mixture until it becomes a soft dough. Cover the dough with a clean cloth and let it rest for about 35 minutes.
- Boil the purple yam in water until it is soft. Mash the yam until smooth.
- In a bowl, mix the mashed yam with 1 cup of sugar and 1 cup of all-purpose flour. Stir until well blended.
- Melt 2 tablespoons of butter in a heated pan. Add the yam mixture and cook until it dries out slightly. Let it cool.
- Form the yam filling into small balls.
- After the dough has rested, roll it into logs, cut into small pieces, and flatten each piece.
- Place a yam ball in the center of each piece of flattened dough. Close the dough around the filling and flatten it again gently.
- Brush the tops with a bit of water and sprinkle sesame seeds on each piece.
- Cook the Piyaya in a heated pan over medium to low heat. Flip until golden brown and crispy.

Serve warm for the best texture; can experiment with fillings like coconut or chocolate.
