  • 1 package Instant Vanilla Pudding Mix
  • 1 cup Cottage Cheese or cream cheese

  • 1 can Crushed Pineapple (well-drained)
  • 1 cup Mini Marshmallows (optional)
  • 1 cup Shredded Coconut (optional)
  • 1 cup Chopped Pecans or Walnuts (optional)
  • For Garnishing: Whipped cream, Maraschino cherries, Toasted coconut flakes, Crushed graham crackers, Vanilla wafers


Instructions

  1. In a large mixing bowl, beat softened cream cheese until smooth, or blend cottage cheese until creamy.
  2. Add the instant vanilla pudding mix along with the reserved pineapple juice, mixing until the mixture thickens.
  3. Gently fold in the well-drained crushed pineapple, leaving some small chunks for texture.
  4. Carefully fold in the Cool Whip to maintain its light, airy consistency.
  5. Stir in mini marshmallows, shredded coconut, and chopped nuts if using.
  6. Cover with plastic wrap and refrigerate for at least 2 hours or overnight.
  7. Before serving, gently fluff and garnish with whipped cream, cherries, or toasted coconut flakes.
