Description
A refreshing and tropical drink perfect for any occasion, this Pineapple Coconut Punch is simple to prepare and can be made in large batches.
Ingredients
- Two 13.5 ounce cans full fat coconut cream
- 1 teaspoon pure vanilla extract
- 6 cups unsweetened pineapple juice, chilled
- 1 cup fresh orange juice, chilled
- ½ cup fresh lime juice, chilled
- ½ cup simple syrup, or more to taste
- 4 to 6 cups sparkling water, club soda, or lemon-lime soda, chilled
- Plenty of ice for serving
- Fresh pineapple wedges or spears for garnish
- Maraschino cherries or fresh cranberries for garnish
- Fresh mint sprigs for garnish
- Toasted coconut flakes (optional for garnish)
- Lime slices or wheels for garnish
Instructions
- Scoop all the coconut cream into a large punch bowl or pitcher. Add the vanilla extract and whisk until smooth.
- Slowly pour in the pineapple juice while whisking gently.
- Add the orange juice and lime juice, whisking until well combined.
- Taste the punch and gradually add simple syrup until desired sweetness is reached.
- Refrigerate for 1 to 2 hours if not serving immediately.
- Just before serving, stir in the chilled sparkling beverage until well mixed.
- Fill serving glasses with ice and pour the punch over.
- Garnish with pineapple wedges, cherries, mint, toasted coconut, and lime slices as desired.
Notes
Serve in tall glasses filled with ice, and add garnishes for an appealing look. Store any leftovers in the refrigerator without the sparkling water to prevent flatness.
