Description

Enjoy the deliciousness of classic pecan pie in a fun, easy-to-eat bark format, combining rich chocolate with crunchy pecans.


Ingredients

  • 24 ounces semi-sweet chocolate chips or chopped chocolate bars
  • 1 tablespoon coconut oil or unsalted butter (optional)
  • 1 cup unsalted butter, cut into pieces
  • 1 cup granulated sugar
  • 1 cup packed light brown sugar
  • 1/2 cup light corn syrup
  • 1/2 teaspoon salt
  • 1 teaspoon pure vanilla extract
  • 3 cups pecan halves or large pieces, lightly toasted


Instructions

  1. Line two large baking sheets with parchment paper.
  2. Toast the pecans on an unlined baking sheet at 350°F for about 5-7 minutes. Let cool.
  3. Melt the chocolate and coconut oil in a bowl or double boiler.
  4. Pour the melted chocolate onto the parchment-lined baking sheet and spread into a thin layer. Chill in the refrigerator for 15-20 minutes.
  5. In a saucepan, combine butter, granulated sugar, brown sugar, corn syrup, and salt; heat and stir until boiling.
  6. Boil while stirring for 5-7 minutes, then remove from heat and stir in vanilla and toasted pecans.
  7. Pour the pecan mixture over the chocolate layer and spread evenly.
  8. Chill for 2-3 hours or overnight until firm.
  9. Break into pieces and store in an airtight container.

Notes

Toast the pecans lightly for enhanced flavor. You can mix in other nuts or add a sprinkle of sea salt on top for extra texture.
