Ingredients
- 1 cup peanut butter
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup rolled oats
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix together the peanut butter, brown sugar, and granulated sugar until smooth.
- Add in the egg and vanilla extract, stirring until well combined.
- In another bowl, combine the rolled oats, baking soda, and salt.
- Gradually add the dry ingredients to the peanut butter mixture, mixing until just combined.
- Fold in the chocolate chips.
- Drop spoonfuls of the cookie dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
For added texture, mix in nuts or dried fruit. Store in an airtight container for up to a week.
