A delightful chicken casserole that’s perfect for weeknight dinners or cozy gatherings, combining tender chicken, savory vegetables, and a luscious sauce.


Ingredients

  • 3 cups cooked, shredded chicken
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 1 cup shredded cheddar cheese
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 small onion, diced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 cup crushed Ritz crackers (for topping)
  • 1/4 cup melted butter (for topping)
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, cream of chicken soup, sour cream, mayonnaise, cheddar cheese, mixed vegetables, onion, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. Lightly grease a casserole dish (about 9×13 inches) with cooking spray or butter.
  4. Pour the chicken mixture into the casserole dish, spreading it evenly.
  5. In a separate bowl, combine the crushed Ritz crackers with the melted butter. Sprinkle this mixture over the chicken layer in the casserole dish.
  6. Bake in the preheated oven for 30-35 minutes or until the casserole is bubbly and the topping is golden brown.
  7. Let it cool for a few minutes before serving.

Notes

Consider using leftover rotisserie chicken to save time. You can customize the vegetables and use fresh herbs for flavor.
