Description

A delightful Filipino delicacy of chewy glutinous rice cakes topped with creamy coconut and sesame seeds.


Ingredients

  • 4 cups glutinous rice flour
  • 1 1/2 cups water
  • 1/8 cup sesame seeds
  • 3 cups coconut milk
  • 3/4 cup sugar
  • Jackfruit strips


Instructions

  1. Place glutinous rice flour in a mixing bowl. Gradually add water, kneading until smooth.
  2. Form the dough into small disks.
  3. Toast sesame seeds in a dry pan over medium heat until golden brown, then crush lightly and set aside.
  4. Heat coconut milk in a separate pan over medium to high heat. Once boiling, add jackfruit strips and sugar, stirring until thickened.
  5. Drop dough disks into the boiling coconut mixture. When they float, they are cooked through.
  6. Sprinkle with crushed sesame seeds and simmer for 2 more minutes.
  7. Transfer to a serving bowl and enjoy!
