A delightful, easy-to-make meal combining ground turkey with tender orzo pasta, perfect for busy weeknights.
Ingredients
- 1 pound ground turkey
- 1 cup orzo pasta
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 4 cups chicken broth
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup spinach (optional)
- Grated Parmesan cheese for serving (optional)
Instructions
- In a large pot, cook the ground turkey over medium heat until browned.
- Add the onion and garlic, and sauté until they are softened and fragrant.
- Stir in the orzo, diced tomatoes (with juice), chicken broth, oregano, salt, and pepper.
- Bring the mixture to a boil, then reduce heat and simmer for about 10-12 minutes, or until the orzo is fully cooked and most of the liquid is absorbed.
- If using, stir in the spinach until wilted and incorporated into the dish.
- Serve hot, topped with grated Parmesan cheese if desired.
Notes
For a creamier texture, you can add cream cheese or shredded mozzarella. Adjust the chicken broth to achieve your desired consistency.
