Description

A delightful one-pot dish that combines vibrant flavors and comforting textures, perfect for busy weeknight dinners.


Ingredients

  • 2 cups rice
  • 1 lb chicken thighs
  • 2 tablespoons shawarma spice blend
  • 4 cups chicken broth
  • 1 cup yogurt
  • 1 cucumber (diced)
  • Salt and pepper to taste
  • Olive oil


Instructions

  1. In a bowl, combine the chicken thighs with the shawarma spice blend, salt, and pepper.
  2. Heat olive oil in a pot over medium heat and brown the seasoned chicken thighs on all sides. Remove and set aside.
  3. Add the rice to the pot and stir for a couple of minutes.
  4. Pour in the chicken broth and bring to a simmer.
  5. Place the chicken on top of the rice, cover, and reduce heat to cook.
  6. Cook for about 20 minutes until the rice is tender and chicken is cooked through.
  7. In a bowl, mix yogurt with diced cucumber and a pinch of salt to make the yogurt sauce.
  8. Serve the chicken over the rice with the yogurt sauce on the side.

Notes

Use Basmati or Jasmine rice for the best texture. Marinate chicken for deeper flavor.
