Ingredients
- 2 cups rice
- 1 lb chicken thighs
- 2 tablespoons shawarma spice blend
- 4 cups chicken broth
- 1 cup yogurt
- 1 cucumber (diced)
- Salt and pepper to taste
- Olive oil
Instructions
- In a bowl, combine the chicken thighs with the shawarma spice blend, salt, and pepper.
- Heat olive oil in a pot over medium heat and brown the seasoned chicken thighs on all sides. Remove and set aside.
- Add the rice to the pot and stir for a couple of minutes.
- Pour in the chicken broth and bring to a simmer.
- Place the chicken on top of the rice, cover, and reduce heat to cook.
- Cook for about 20 minutes until the rice is tender and chicken is cooked through.
- In a bowl, mix yogurt with diced cucumber and a pinch of salt to make the yogurt sauce.
- Serve the chicken over the rice with the yogurt sauce on the side.
Notes
Use Basmati or Jasmine rice for the best texture. Marinate chicken for deeper flavor.
